Enter Vitamix Sheet Pan Tomato Soup. This is the best easy tomato soup. I send the kids out to gather tomatoes and basil from the garden, toss it on a sheet pan with olive oil, garlic, and balsamic vinegar. Roast, blend, add a splash of cream, and serve.

We love whipping up giant bowls of this after a morning of yard work or hiking around the lake. Tomato soup and grilled cheese feature in so many weekend memories from my childhood. Coming in from playing in the snow with my mom and making a can of tomato soup and grilled cheeses together is one of my favorite memories.

Ingredients for Vitamix Sheet Pan Tomato Soup
Fresh tomatoes: roasting fresh tomatoes until they lightly caramelize gives you so much depth of flavor without having to simmer them on the stove for hours. You can use whole cherry tomatoes, plum tomatoes, or quarter larger tomatoes for this recipe.
Garlic: you can never go wrong with roasted garlic. Roasting the garlic cloves gives it a sweeter milder flavor that we love.
Fresh basil: its natural sweetness helps cut the acidity of the tomatoes and gives a light fresh flavor to the bisque. I like to add some to the roasting pan and some more at the end so the the flavor really comes through.
Balsamic Vinegar: good balsamic vinegar adds a subtle tang that takes this bisque to the next level. You can leave it out but it really helps develop the flavors quickly.
Cream: a splash of heavy cream takes this recipe from a simple tomato soup to a delicious bisque but can be substituted with any liquid. Just be careful adding lower fat milks to soup when hot as they may curdle.
Salt and Pepper: Finish off your soup with a little kosher salt and fresh cracked black pepper!

How to make Vitamix Sheet Pan Tomato Soup
Preheat oven to 400°F.
Spread tomatoes, garlic, and fresh basil in an even layer on a rimmed baking sheet.
Drizzle with olive oil, balsamic vinegar and toss to coat. Sprinkle with 1/4 teaspoon each salt and black pepper.
Roast until the tomatoes are soft and bursting, 20 to 25 minutes.
Remove the basil leaves and carefully transfer the tomatoes and garlic to a blender. Blend, scraping down the sides of the blender as necessary, until smooth. Remember to use caution when blending hot ingredients
Add cream and fresh basil. Serve immediately or transfer to a pot and simmer over low heat until ready to serve.
Garnish with more fresh basil, red pepper flakes, and parmesan cheese!
Can you make tomato bisque ahead?
You can make this soup ahead and store in an airtight container in the refrigerator for up to three days or freezer for up to 6 months.
Variations on this Vitamix Sheet Pan Tomato Soup:
- Add shallots, red onion, or bell peppers to the roasting pan
- Swap the fresh basil for fresh thyme or rosemary.
- Add roasted red peppers when blending
- Swirl Pesto or Harissa into the finished soup
- If you want a thinner soup add a splash of chicken broth or vegetable broth
- make a delicious creamy vegan version by swapping the cream out for cashew cream
Do I need a Vitamix for this recipe?
No, any regular blender, food processor, or immersion blender will work great too. We used an immersion blender for everything for years! There is nothing in this Vitamix Sheet Pan Tomato Soup that a regular blender will struggle to break down just be patient and add more liquid if needed.

- 1-2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- a handful of fresh basil leaves
- 1/4 cup half and half
Instructions
