To create an authentic Thai-style fried rice, several key ingredients are essential:

  1. Fish sauce: This umami-rich sauce adds depth and saltiness to the dish.
  2. Green onions: Also known as spring onions, they contribute a mild onion flavor and vibrant color.
  3. Garlic cloves: These aromatic cloves add a delightful fragrance to the dish.
  4. Thai jasmine rice: The fragrant long-grain rice adds a distinct aroma and fluffy texture. For this recipe you want cold leftover rice.
  5. Lime wedges: A squeeze of lime juice adds a tangy and refreshing element to the dish.

Supplies

The Cooking Process: Perfecting Thai-Style Fried Rice

Step 1: Preparing the Rice

For the best results, it’s recommended to use day-old rice that has been refrigerated overnight. The slightly dried-out texture prevents the rice grains from clumping together during the stir-frying process. If using freshly cooked rice, spread it out on a tray and let it cool before proceeding.

Step 2: Sautéing Aromatics

Start by heating a large skillet or wok over medium heat. Add a generous amount of vegetable oil and let it heat up. Once the oil shimmers, add the garlic cloves and sauté until fragrant. Then, add the white part of the  green onions and continue to sauté for a minute or two, allowing their flavors to infuse the oil.

Step 3: Stir-Frying with Flair

Now, turn up the heat to medium-high and add the cooked rice to the skillet. Break up any clumps with a spatula or a wok spatula, ensuring that the rice grains are evenly coated with the fragrant oil. Continue stir-frying the rice for a few minutes, allowing it to absorb the flavors and develop a slightly crispy texture.

Step 4: Adding Flavorful Elements

At this point, you have the flexibility to customize your Thai-style fried rice. Some popular additions include:

  • Scrambled eggs: Push the rice to one side of the skillet, creating space to scramble a few eggs. Once the eggs are cooked, incorporate them into the rice, breaking them up into smaller pieces.
  • Thai chilis: For those who enjoy a spicy kick, thinly slice some Thai chilis and add them to the skillet. Adjust the amount according to your desired heat level.
  • Vegetables: While traditional Thai-style fried rice often includes diced bell peppers or red peppers, feel free to experiment with your favorite vegetables. Add them to the skillet and stir-fry until they are cooked but still retain their crispness.
  • Black soy sauce: Thai style fried rice typically included black soy sauce which enhances the umami flavors but can be hard to find. Regular soy sauce works as well.

Step 5: Flavor Enhancement and Serving

To elevate the flavors of your Thai-style fried rice, it’s time to add the final touches:

  1. Fish sauce: Drizzle a generous amount of fish sauce over the rice. Its savory and slightly briny taste adds an authentic Thai flavor.
  2. Lime juice: Squeeze fresh lime juice over the rice, providing a bright and tangy note that balances the richness of the dish.
  3. Fresh herbs: Add a handful of fresh herbs such as Thai basil or regular sweet basil. The aromatic herbs contribute a refreshing and fragrant element to the dish.
  4. Garnishes: Serve your Thai-style fried rice with a sprinkle of sliced green onions and a wedge of lime on the side. These garnishes add a pop of color and a burst of freshness.

Storing Thai fried rice

Store leftover Thai style stir-fried rice in an airtight container in the refrigerator for up to three days.

  3. Coconut Rice: Substitute a portion of the water used for cooking the rice with coconut milk for a lusciously fragrant twist.

Ingredients

  • 2 tablespoons neutral oil such as vegetable or avocado
  • 2 chicken breasts, thinly sliced or 4 boneless thighs cubed
  • 1-2 medium carrots, peeled and diced
  • 3 cloves of garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 4 green onions, cut into large pieces and whites separated from greens
  • 3 whole Thai bird's eye chilies or 1/2 a red bell pepper diced
  • 2-3 teaspoons fish sauce
  • 3 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 2 large eggs, beaten
  • 4 cups leftover Thai jasmine rice, chilled
  • Bang Bang sauce (optional, for serving)
  • Cilantro or Thai basil, for garnish
  • Fresh lime wedges, for serving

Instructions

  1. Season the thinly sliced chicken breasts or cubed chicken thighs with a pinch of salt and pepper.
  2. Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Add the seasoned chicken and saute until it is fully cooked through.
  3. In the same skillet as the chicken add the diced carrots and cook until they have softened slightly. Then, add the minced garlic, grated ginger, green onions, and Thai bird's eye chilies or other peppers. Sauté until the mixture becomes fragrant, approximately 1-2 minutes.
  4. Add the chilled leftover rice to the skillet. Drizzle the fish sauce, oyster sauce, and soy sauce over the rice. Toss everything together, ensuring the rice is well coated with the sauces. Push the rice to one side of the pan.
  5. On the empty side of the pan, add a little more oil if needed. Pour the beaten eggs into the pan and let them cook for a moment until they start to set. Using a rubber spatula, gently scramble the eggs until they are just barely set, then combine them with the rice.
  6. Stir in the greens of the spring onions and mix everything together to combine the flavors.
  7. Serve the Thai-style chicken fried rice hot, garnished with cilantro, Thai basil, or more green onions. Provide lime wedges on the side for squeezing over the dish. Optionally, offer bang bang sauce for additional flavor.
